this one is a doozy. not to get all bill nye on you but shio (salt) koji is a marinade made by taking grain, commonly rice, and inoculating it with a mold (aspergillus oryzae) then dried and mixed with salt and water to form a porridge. sounds weird. we know. but its sweet, funky and something to enjoy to its fullest.
